Pea Shoots, Fig & Blueberry Salad

Salade aux pousses de pois, figues et bleuets

Ingredients

  • 4 cups of fresh pea microgreens
  • 1 cup of fresh blueberries
  • 1 cup of fresh figs, quartered
  • ½ cup of toasted and chopped walnuts
  • ½ cup of crumbled feta cheese
  • 3 tablespoons of white balsamic vinegar
  • 1 tablespoon of honey
  • ¼ cup of camelina oil
  • Freshly ground dune pepper and salt, to taste

Instructions

In a large salad bowl, combine the pea microgreens, blueberries, figs, walnuts, and feta cheese.

In a small bowl, whisk together the white balsamic vinegar, honey, and camelina oil. Season with freshly ground dune pepper and a pinch of salt.

Pour the dressing over the salad and toss gently until all the ingredients are evenly coated.

Serve immediately as a refreshing starter or a vibrant side dish to your main course.

Tip

This salad is delicious on its own, but if you’d like to make it a complete meal, add some extra protein such as grilled chicken, seared shrimp, or marinated tempeh.
